So this week I have been really off schedule. I normally do my grocery shopping on Saturday or Sunday and prep a few meals for the week. Well with last week being Thanksgiving and all the Christmas shopping I did this weekend I just didn’t find the time. So here I am on a Tuesday having to do my grocery shopping. I was stuck in the office till 5 and then by the time I was done shopping I was extremely hungry. By the way, it really isn’t a good idea to shop for food when you’re hungry. I wanted to make something that was fast so I had time to make cookies with my daughter tonight and maybe even make lunch for tomorrow.
Do you have that one recipe that you always go to when you don’t know what to eat? Well, this is mine. First, I would like to say I Love pasta and I mean LOVE. If I could I would eat pasta every day. This recipe is easy, pretty quick to make and I usually always have these ingredients on hand. Lucky for me my daughter loves pasta as much as me so this is how I get her to eat some vegetables.
First, I start with the water and once it starts to boil I add salt and then the noodles. I personally break my noodles in half so they aren’t so long. Once the noodles are in I start to saute the minced garlic in butter in another pan. I used two cloves of garlic but use as much as you like. I then add the frozen spinach. Once it starts to thaw I add the mushrooms. You can add any veggies you want, sometimes I use artichoke or zucchini.
Once noodles are done I drain them and add the rest of the butter to the pan and return the noodles make sure you mix the butter into the noodles really well.
You can either add the veggies to the pan with noodle and mix them or I just put the noodles in my bowl and top it with the veggies. Last I top it with vegan parmesan cheese. I use Follow Your Heart brand.
- 4 cups water
- 3-4 Mushrooms
- 1 cup Frozen Spinach
- 1 tsp salt
- 4 tbsp Vegan butter I use Earths Best
- 2 cloves garlic
- 8 oz Noodles
- 1 cup Vegan Pamesan
- 1. Put water in a saucepan and bring to a boil2. Once boiling add salt then noodles and stir occasionally 3. In another pan add 1tbs of the vegan butter. Mince garlic and saute in butter for a minute. 4. Next, add frozen spinach and once it starts to defrost add cut up mushrooms and cook on medium heat for about 5 minutes or until everything is cooked. 5. Once noodles have boiled for about 10min they should be ready. Drain noodle and add the rest of the butter to the saucepan. Then return the noodles to the pan and stir. 6. Once noodles are covered in the butter add the spinach and mushrooms to noodles and stir it together. 7. You can add the Vegan Parmesan to the noodles or put noodles in your bowl and then add the parmesan.
