I know it has been a while since I have posted a recipe and I am so sorry. I have so many I want to share with you but life has just been very busy lately. Also, my recipe plugin stopped working and I had to find a new one I loved which was harder to pick than I thought it would be. Now that I have a new plugin I love I can share all the recipes I have been wanting to share. I have made a couple of soup recipes that I will be sharing very soon with all of you but today I am sharing my Mushroom Rice.
I have been trying to eat more of a plant-based diet and it can get a little boring. I mean I try to mix it up between, rice, quinoa, barley, and other grains but it still needs a little something. Now I like to add as much flavor as I can to them. Cooking them in broth and adding veggies really helps. Everyone who has tried this rice has absolutely loved it. My daughter even asked me to pack it in her lunch box the next day. This rice is very simple to make but also tasty. You can eat it as a main dish or a side dish. This week I used it as a side and ate it with baked tofu and sauteed spinach. Then I meal for my lunches I baked some butternut squash, cauliflower, and broccoli and added it on top. It was delicious both ways.
Like a lot of my recipes, you can customize this to your liking by adding more or fewer mushrooms and onion. This is just how I like it. Do keep the water to rice ratio though otherwise you might get burnt or mushy rice. I personally love the Not-Beef Bouillon Cubes. It is my favorite so and has the best flavor. I use this for all my soup as well.
- 1 tbsp olive oil
- 1 cup chopped yellow onion
- 1 cup chopped mushrooms
- 1 3/4 cups water
- 1 vegetable bouillon cube
- 1 cup Basmati rice
- 1. Add oil and onion to frying pan and cook onion till translucent on medium heat. 2. Add the mushroom and cook for about 2 minutes3. Once mushrooms cook a little add the rice, water, and bouillon cube.4. Once the water starts to boil put it on low heat, cover with a lid and let simmer for 20 min. 5. All the water should be evaporated after 20 minutes. let cool and serve.
