I have so much to say about this yummy, delicious and sugar-free oatmeal. My daughter’s favorite thing to eat is oatmeal. She will eat it for breakfast, lunch, and dinner if I let her. My problem with oatmeal is how much sugar is in them. Whether you make it yourself and add it so it tastes good or eat the ones you buy at the store preflavored, you end up eating a lot of sugar and that is sugar my child doesn’t need. I have tried making oatmeal with other sweeteners like agave but my daughter never likes them. I was determined to find a sugar free oatmeal. I should state when I mean sugar-free I mean added sugar, not natural sugars found in fruit.
After a bunch of trial and errors, I finally made the perfect oatmeal for my daughter that she absolutely loves. I decided to try to sweeten it with my Date syrup I made. I add a few tablespoons of this and add chopped dates as well and she is as happy as can be although sometimes she asks for more chopped dates which is fine with me. To be honest with Halloween right around the corner this Pumpkin Date Oatmeal is perfect for those chilly mornings. Out here fall means chilly mornings and hot sweaty afternoons. You have no idea how much I wish we actually had four seasons out here.
First things first you need to make some Date syrup. This is so simple and only takes two ingredients and a blender. I do recommend fresh dates I have bought dates at Trader Joes a few times now and unfortunately, they are never sweet which means they don’t make the oatmeal sweet and tasty. After the date syrup is ready it’s time to make Oatmeal. I make a batch on Sunday to last my daughter the week. You might want to double it if this is for an adult my daughter doesn’t eat large amounts of anything at one time.
First, start off bringing two cups of water to a boil and then add salt to add a little flavor to the oatmeal. I then add a cup of oatmeal. I try to make this as healthy as possible so I also add about 1/4 cup of Super seed & ancient Grain blend. I get mine at Trader Joes but if you don’t have one near you no worries Amazon does. I let this simmer for 10 minutes.
Once the oatmeal is done I add 1/4 cup of date syrup but you can add as much or as little as you want to depend on your preference. I then add a tablespoon of Pumpkin Spice seasoning and stir it all up. If you want to add some actual pumpkin in it that would be delicious too and this would be the time to add it.
Last I chop up 2- 3 dates and add it to the oatmeal. I put it in a container and refrigerate it till she is ready to eat it. When ready to eat scoop out how much oatmeal you want and add it to a bowl then microwave for 45 seconds to a minute stirring halfway. You can also add some more dates to the top after reheating it as I do for my daughter. She loves the dates and sometimes asks for even more. This is her little bowl below. I add fruit, nut butter and coconut flakes to mine and it is so delicious.
This also makes a great school lunch and she requests this at least once a week. I heat it in the morning and add it to a thermos food container so it stays hot. This is the one I bought for her Rose Gold Thermos. I love that it is bigger than the other ones I have seen, it’s 16oz. I even make bean burritos and they fit in there.
