It’s Tuesday and it already feels like a long week. I woke up early today. Got to the office early thinking I would get a lot done so the day wouldn’t have to be hectic. Of course, the day had other plans for me. The moment I got there I had so much work come in. I was just overwhelmed, somehow I manage to finish everything and get out of the office on time but I am so exhausted. I get home and the last thing I want to do is make dinner but I also really don’t want fast food. When I opened my fridge it was full but I just didn’t want to be in the kitchen cooking for half an hour. That is when it hit me to make my really easy and fast to make, Bean and Cheese filling.
Absolutely love this filling. It is so easy to make and so delicious. I use it to make burritos, flautas or I just scoop it in a bowl and dig in with some chips, topped with some avocado. Today I made a burrito with it and then I decided I wanted more so I ate it as a dip after.
Bean and Cheese Filling
This recipe is seriously so easy to make. First, add the vegan cream cheese to the pan and have it on medium heat so it can start to melt. Next, you drain and rinse both cans of beans and then add to the pan. Then add the rest of the ingredients to the pan and stir. Let it simmer for five minutes. That is it, you are done. Now you can top it with some avocado or put it on a tortilla for a burrito. If you want to up your game a little more then after you put it in a flour tortilla you can fry it in some oil and now you have delicious flautas.
